Chocolate Cherry Dr. Pepper Cupcakes

A couple of weeks ago husband walked into his break room at work, and in on some friends making fun of him. One guy was joking around about all of the cupcakes that Nick brings into work and said “Look at me, I’m Nick, and I have Dr. Pepper cupcakes”. Well, husband at that moment decided that I HAD to make Dr. Pepper cupcakes. Coincidentally, at that time Dr. Pepper had just released the limited edition Diet Chocolate Cherry Dr. Pepper. I was TOTALLY hooked at first sip. It is so YUMMY, and thought instantly that it would make a great cupcake.

I totally nailed this one. The cupcake is very moist, has a very pretty dome, and tastes EXACTLY like the Diet Chocolate Cherry Dr. Pepper drink. I particularly like the cherry frosting. Very light and airy with good old fashion soda shop cherry flavor. Total pure unadulterated yumminess! Also, this is a single bowl recipe totally easy to make… cupcakes for the lazy people!

Makes 30 cupcakes

Chocolate Cherry Dr. Pepper Cupcake:

  • 2 ¼ cups of Dr. Pepper
  • 2 cups of sugar
  • 2 ½ cups of cake flour
  • 2 eggs
  • 4 ounces of unsweetened chocolate
  • ½ cup of maraschino cherry syrup
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup of unsalted butter (2 sticks)
  • pinch of salt
  • 1 ½ teaspoons of cinnamon
  • 1/2 teaspoons of vanilla
  • ¼ cup sour cream

Preheat oven to 325º. In a medium size sauce pan bring Dr. Pepper & cherry syrup to a boil. Place chocolate and butter into a bowl and pour hot Dr. Pepper over, cover and let sit for 10 minutes. Whisk mixture till smooth. Stir in sugar, salt, cinnamon, baking soda, baking powder, vanilla, and sour cream. Add flour in 2 parts alternating with the eggs and whisk till smooth. The mixture will be runny… but tasty. Fill cupcakes cups and bake approximately 15-20 minutes or until skewer comes out clean

7 Minute Cherry Frosting:

  • 4 egg whites
  • ½ teaspoon cream of tartar
  • 2/3 cup of maraschino cherry syrup (you may need more)
  • 2lbs confectioners sugar
  • ¼ teaspoon salt

Throw everything into a Pyrex bowl ….. except don’t use all of the cherry syrup here. Start with ½ and beat with a hand held electric mixer for 1 minute . Place bowl over a pot of boiling water (be sure not to let the water touch the bowl… just the steam) and beat on high for 7 minutes adding more cherry syrup as needed to obtain desired consistency. Be sure as you are beating that you are also scraping down the sides of the bowl. DO NOT let the mixture set over the bowl as your frosting will soon turn into a large meringue cookie. See this couldn’t be easier! Oh yeah, don’t forget to top your cupcakes with a cherry!

Woo-Hooo! These sound amazing! I recently discovered the Diet Dr. Pepper Cherry Chocolate – so sad it’s seasonal! But I did buy up a huge supply so maybe if I ration it I can make it last until the new stuff arrives in November! I can hardly wait to make these! Thanks!

What about a recipe for a vanilla version using the Diet Cherry Vanilla Dr. Pepper? Could I adjust this to get a cake like that??

Hi im from London and your cupcakes look amazing.
a few things im a little confused about…
I’v worked out what the wieght of a stick of butter is – (4oz./115 g) and now
now im stuck with where to get “maraschino cherry syrup” (is it like syrup you’d put on icecream ?)
If you can help that would be amazing.

Maxscene: For the maraschino cherry syrup it is easiest to just use the syrup that is in the jar along with the maraschino cherries. These are the cherries that you typically find on top of an ice cream sundae.

Heather: HHHMMMM.. now that sounds delicious! I would probably try using vanilla syrup for coffee and italian soda.

That would give it a nice soda shop flavor that is in the Dr. Pepper itself. It is a good idea, and I am going to have to work with it for a bit.

This is going to sound pretty silly question, but do you use solid baking chocolate or liquid baking chocolate in this recipe? Or is there no difference in outcome? I’m a bit of a novice baker, but I’m going to give this a go this weekend.

I use hard chocolate squares. I don’t know if there would be a difference using liquid… other than I have just always baked with the squares. I didn’t even know that there was unsweetend liquid chocolate. Learn something new everyday!

Hi, I really want to try out these cupcakes, but I have no idea what “2 sticks of unsalted butter” is, I mean: what are sticks? How much is that?
I’m from the Netherlands, so that may explain my dullness :P

Thank you! I figured that it would be solid chocolate, but when I Googled the ingredient I got a few liquid results and was scared I was going to muff this up.

Inge- I found this online and it should be pretty helpful.

1 stick of butter = 1/4 pound
1 stick of butter = 1/2 cup
1 stick of butter = 8 tablespoons
1 stick of butter = 4 ounces
1 stick of butter = 113 grams

Just to clarify… you used regular Dr. Pepper (or Diet Dr. Pepper?) and let the maraschino syrup add the cherry flavor? It doesn’t seem from the recipe that you used the Limited Edition Diet Chocolate Cherry Dr. Pepper….that’s great because then I’ll be able to make these year-round.

These cupcakes are freaking amazing! One thing: We followed the recipe exactly and got 31 cupcakes (woo!) but even after putting on a *ridiculous* amount of icing on each one, we probably only used half of the icing! Just wondering if there’s something we may have missed. (We didn’t pipe it on, but still!)

I’ve got a bottle of Dr. Pepper Syrup from the Dublin plant. How would I adjust this recipe to use the syrup and not a can of the soda? I loved their cake mix and now want to recreate at home.

Wow, this looks great! I should find out where I can get that cherry syrup… Or unsweetened chocolate… Or vanilla, for that matter. I’m not much of a cook, but this recipe sounds delicious!
Katie: Probably not, it says “Dr. Pepper”. The cherry flavour comes from the cherry syrup.

I used yougurt instead of sourcream cuz im allergic to it and it turned out just as awesome i think!!Altho you have to cook it longer like 35 mins at least.

OMG, I made these for my husbands birthday because he is a dr. pepper fan to the extreme, and he has asked me to make them again almost every week since! They are absolutely divine, I can’t thank you enough for the recipe. SOOOOOO moist, and they stay moist for at least 5 days! The only thing I changed, was I finely minced about a 1/2 cup of marachino cherries and added them to the batter, made for a more definite cherry flavor, but not overwhelming at all. I didn’t use your frosting recipe (I’ll try it next time) but I used storebought frosting in a can, the cream cheesey one, and added the marachino cherry juice to that, and it came out perfect!

I’m about to make these again for a friends birthday who happens to be another dr. pepper lover!

I really want to try these, but I do not own a hand mixer. Is there a way to do this with a standing kitchenaid? I love my kitchenaid it just doesn’t work for over the stove projects like this.
